They are plentiful this season and I take advantage of food produce seasons because they are easily accessible and affordable. Life hack-It is also the perfect time to freeze food/fruits that you use on the regular for when they are out of season.
Here’s a recipe that will help keep you warm as you stay indoors and help you boost your immunity level at the same time.
This has got to be the easiest butternut squash soup recipe ever. You basically throw everything in a pot, simmer it, purée it, and you’re done. It’s still everything you expect a squash soup to be: silky, slightly sweet, and full of flavor.
1 kg Butternut, peeled and cubed
1 Onion finely chopped
1 tablespoon Garlic minced
1 Red bell pepper finely chopped
1 cup Chicken stock
4 sprig Thyme
1/2 cup Coconut cream
Salt and pepper
In a saucepan, fry onion, garlic,red bell pepper and thyme till the onion is soft.
Add butternut and chicken stock to the onion mix and cook until the butternut is soft and ready.
Remove from heat and blend till smooth.
Return the blended soup to the pot at a low heat.
Add cream and season with salt and pepper.
Simmer for 5min and serve with a garnish of coconut cream and/or toasted bread.
